Since December 12, Pennsylvania restaurants have not been able to eat indoors according to Governor Wolf's orders. Roosevelt Tavern, located in York, is one of the restaurants affected by these restrictions. But it was announced last week that restaurants have the option of reopening dining areas with 50% capacity, which eases some of the financial burdens that owner Byron Kehr has faced. the effects of short-term closures and restrictions. For example, restaurants can order food at the beginning of the week for personal meals, only to be met with closings at the end of the week. This results in food waste and wasted money. Restaurants also experience challenges with their staff. The service industry's employees stop finding more stable jobs, leaving restaurants short and struggling to find replacements in an already difficult job market.

Sarah Brown: When did you buy the Roosevelt Tavern? What does it mean to you?

Byron Kehr: We bought the restaurant in December 2011. I have been in the restaurant business for 36 years. I started when I was 14 years old and have always dreamed of having my own restaurant. The restaurant industry is everything I have ever known.

Sarah: How has COVID-19 affected your business?

Byron: Covid-19 has really ruined the restaurant industry nationally by closing indoor restaurants and limited capacity throughout the year. The closure of the indoor dining room during the high season was particularly damaging. Between holiday parties, New Year celebrations and gift card sales, it is our busiest time of the year.

Sarah: What keeps you and your team going in such times?

Byron: This is our livelihood, which means we have to find ways to turn and push through these tough times.

Sarah: What have been some positive things to come up with by 2020?

Byron: Business did not come out too well in 2020, but it did allow us to start a berry soup company that has really helped the whole pandemic. Our soups have made it to local neighborhoods and have even been enjoyed by health heroes at Milton S. Hershey Medical Center. Personally, it is positive that I was able to spend much more quality time at home with my family. I also took the opportunity to be more outdoors, enjoy kayaking and hiking.

Sarah: Why should customers come to your restaurant?

Byron: To enjoy good food and service in a safe and comfortable atmosphere. It's a great place to be!

Sarah: What are some of your favorite meals on the menu? My favorites are mussel & mussel steamer (it's so good I could swim in it!) And the filet mignon is always perfectly prepared.

Byron: It's hard to choose, but I have to say I love our braised short ribs, crab cakes, seafood pasta and local steaks.

Sarah: What do you look forward to in 2021?

Byron: I look forward to returning to some normalcy and working at full capacity. Supporting local businesses is more important than ever during these times.
